Sunday Dinner

Sunday Dinner here:
Today's recipe is:

Chinese Chicken Fried Rice





Ingredients:

Peanut oil
Ginger, small piece chopped, optional
1 medium onion chopped
1/2 teaspoon garlic chopped fine
1 cooked chicken picked apart and chopped
( I used a roasted chicken from the store)
4 Tablespoons of soy sauce
1 cup shredded carrots
2 stalks chopped celery
2 cups cooked broccoli
1 cup cooked cauliflower
1 orange pepper sliced into strips
1 yellow pepper sliced into strips
(you can use any peppers you like)
1 cup peas, or pea pods
( fresh, frozen, or canned, use what you like)
6 cups cooked white rice
( I used Uncel Ben's already cooked in the bag)
3 eggs
1/2 cup soy sauce
Pepper

This makes a large family size batch.
You can used any veggies you like.
You can use brown rice also.
Make it to fit your taste.

Directions:

In a very large pot or pan, cover bottom with oil. If you don't have a large pot, do it in batches. Heat oil on medium. Add onion, ginger, and garlic until onions are soft, do not let garlic or ginger burn.
Add chicken and 4 Tbsps soy sauce and sir fry for about 4 to 5 mins.
Remove and put in bowl.

Add oil if needed and add the veggies and cook for 5 to 6 mins.
Add in  rice and 1/2 cup soy sauce along with the onion mixture. Mix well.

Make well in the middle of the rice and add the 3 scrambled eggs. Stir eggs until soft mounds of eggs form. mix all together.
Add pepper to taste.

You can make this just veggies, or add
pork, beef, or shrimp (Yum).
What ever you like.

Ready in 30 to 60 mins.
Feeds 6 to 8 people.
( great reheated)
