Sunday Dinner



Hi Everyone,

Today I am going to share my Stuffing Recipe.

The only bad thing is I learned this from my mom and she didn't measure anything.
Mom was an excellent cook!!!
So I will do the best I can.









O.K. here goes:

Start out with one to one and a half loaves of bread torn into small pieces and let dry.
I put mine in the oven for about an hour
at 200 and stir every 30 min.
Take out put to the side, and sprinkle 1 cup of raisin and or dried cranberry.(my addition)
Then in a large pot place 2 sticks of butter.
Dice 1 lg. onion and 4  stalks of celery and
add to pot. The spices are, rubbed sage, ground thyme, and poultry season. along with salt and pepper. Here is where it gets a little tricky.
I am going to say 1 teaspoon sage, 2 of thyme
and 2 of poultry season, always add less, you can put more in later. let this saute until veggies are soft. Add chicken or turkey stock, about about 5 cups. Bring to boil. Turn off.
Take the bread and add salt and pepper to taste. Take all the veggies out of the stock and add to bread, then add stock a little at a time until bread is very moist. Taste, then if it needs more spices you can add them then. If it is to wet add more bread, if to dry add more stock.
Mix up 3 eggs and stir into dressing.
pour into a baking dish sprayed with Pam, cover and bake at 375, for about an hour, check every half hour  to see if middle is firm,
you can take off cover the last 15 min. to have the top crunchy,( I love that part).:)

Serves 6 to 8 people

Stuffing is one of my favorite dishes..I could eat a whole dish myself...
